
Summer is the perfect time for easy go-to meals that kids will absolutely love! When choosing summer produce, always go for items that are currently in season, and try to buy locally whenever possible. Fruit and vegetables that are in season during the summer months include apples, grapes, melons, cucumbers, peaches, green beans, and corn—all of which kids usually love! Most families spend their summers outdoors and on the go, so you definitely want to choose recipes and snack items that are easily carried and keep well. It’s a good time to invest in a good insulated lunch bag that will keep your food its target temperature during that 3-hour trip to the playground. Try the following simple recipes and check back often for more ideas.
Fruit Skewers (for younger children, use Popsicle sticks for safety): Alternate melon cubes, grapes, and pineapple cubes on each stick. Place skewers in a large Ziploc bag along with an ice pack wrapped in saran wrap.
Cheesy Corn on the Cob: While corn on the cob is perfect as is, you can make an even tastier treat by dredging the prepared corn (grilling is my favorite) with a little butter and crumbled Parmesan cheese. Wrap tightly in aluminum foil to-go and store in an insulated lunch bag.
Cheddar and apple pinwheels: Layer cheddar cheese and thinly sliced apples over a large whole grain flour tortilla and roll tightly. Slice into 1-inch wheels and store in a Ziploc bag for the road.
