National Peanut Butter Cookie Day – June 12

Bust out the peanut butter, because it’s time to celebrate! “Celebrate what?” you may ask. Why, it’s Peanut Butter Cookie Day! Didn’t you know? Ok, I confess: I didn’t know until a few weeks ago, either. But let’s not let that stop us from the gluttonous joy of celebration! Despite my best efforts and all my research tricks, I couldn’t find a verifiable history of the date. It seems Peanut Butter Cookie Day has just always been around, waiting to be noticed when the chocolate chip cookies were all gone.

So enough yakking, let’s get to the cookies! Find your grandma’s peanut butter cookie recipe, or dig up a new favorite and get busy! Too hot to bake? No worries – here’s a quick no-bake version that will have you celebrating in no time.

No-Bake Peanut Butter Cookies
Ingredients

2 cups white sugar
1/2 cup butter
1/2 cup milk
1/2 cup peanut butter
3 tablespoons cocoa
3 cups quick cooking oats
1 teaspoon vanilla extract

Directions

Mix together sugar, butter or margarine, and milk in microwave safe bowl.
Microwave on High 6 minutes, stirring well at 3 minutes.
Mix in peanut butter, cocoa, oats and vanilla.
Drop by spoonfuls onto waxed paper.
Chill to set.
