

It’s the happiest day of the year for chocoholics – National Fudge Day! Today is the day to indulge in your love of chocolate. Whether you like your fudge made with chocolate, peanut butter, or marshmallows doesn’t matter. Heck, make a batch of each!
The concept of a fudge-like candy started in the late 17th century with a candy called a Scots Tablet. While the Scots tablet has most of the same ingredients, the American fudge has added chocolate and is of a softer consistency than the Tablet. A student at Vassar College was one of the first to document our American chocolaty treat. Emelyn Battersby Hartridge wrote a letter in 1886 telling of a schoolmate’s cousin that made fudge and sold it for forty cents a pound.
I’m lucky enough to be in a family of fabulous cooks. My grandmother makes the best desserts I’ve ever tasted anywhere. Here’s her recipe for fudge with nuts and marshmallows. It’s one of my favorite treats. Enjoy!
Meme’s Rocky Road Fudge
Ingredients
1 12-oz package semi-sweet chocolate chips
1 teaspoon salt
1 teaspoon vanilla
1 can sweetened condensed milk
2 Tablespoons margarine
2 cups dry roasted nuts (your choice of nuts)
1 10.5-oz package miniature marshmallows
Directions
In saucepan, melt chocolate with milk, vanilla, salt, and margarine.
In large bowl, combine nuts and marshmallows.
Add chocolate mixture and mix well.
Spread into a 9×13 pan lined with wax paper.
Chill for 2 hours.
