It is always a challenge to come up with new, healthy weekday lunches for myself. The kids like to eat PB & J, mac and cheese and similar fare. I don’t want those, but I am usually at a loss for what I do want. I came across this idea on a weight loss Web site and just tweaked it a little to my taste. It is high in protein, monounsaturated fats (the good ones) and super yummy deliciousness. One bite and this will be your new favorite weekday meal.
Ingredients:
- 1 5-ounce can of light or albacore chunk tuna
- 2 teaspoons of fat free mayo
- 1/2 teaspoon Worcestershire sauce
- 3 bread and butter pickle slices, chopped well
- 2 teaspoons diced onion
- 1 slice whole grain bread
- 1 tablespoon raw, unsalted sunflower seeds
- 1 ounce shredded mozzarella cheese
Directions:
- Preheat oven to 475 degrees or broiler to low-med.
- Drain tuna and spoon fish into a bowl. Mix tuna and mayo together well. Stir in Worcestershire sauce, pickles and onion.
- Spoon mixture evenly onto slice of bread.
- Sprinkle sunflower seeds over the tuna mixture. Sprinkle shredded cheese on top of that.
- Cook under the broiler for 3-5 minutes or until cheese is melted and slightly browned.
- Cool for a few minutes and enjoy!
