Mama’s Recipe Box: Crunchy Tuna Melt

tuna-1It is always a challenge to come up with new, healthy weekday lunches for myself.  The kids like to eat PB & J, mac and cheese and similar fare. I don’t want those, but I am usually at a loss for what I do want.  I came across this idea on a weight loss Web site and just tweaked it a little to my taste.  It is high in protein, monounsaturated fats (the good ones) and super yummy deliciousness.  One bite and this will be your new favorite weekday meal.

Ingredients:

  • 1 5-ounce can of light or albacore chunk tuna
  • 2 teaspoons of fat free mayo
  • 1/2 teaspoon Worcestershire sauce
  • 3 bread and butter pickle slices, chopped well
  • 2 teaspoons diced onion
  • 1 slice whole grain bread
  • 1 tablespoon raw, unsalted sunflower seeds
  • 1 ounce shredded mozzarella cheese

Directions:

  1. Preheat oven to 475 degrees or broiler to low-med.
  2. Drain tuna and spoon fish into a bowl.  Mix tuna and mayo together well.  Stir in Worcestershire sauce, pickles and onion.
  3. Spoon mixture evenly onto slice of bread.
  4. Sprinkle sunflower seeds over the tuna mixture.  Sprinkle shredded cheese on top of that.
  5. Cook under the broiler for 3-5 minutes or until cheese is melted and slightly browned.
  6. Cool for a few minutes and enjoy!
